Q&A with celebrity chef James Martin

Several years ago in an Amsterdam restaurant I had a Tilapia fish with a mango sauce. I have made several attempts myself since, but have never quite succeeded, do you have any suggestions? Miss Lever, Brussels, Belgium

JM: It's as simple as pureed mango and lime juice with some chilli and mint. It's a great refreshing recipe and easy to make.

I think it's really good that you're backing this fish campaign, but you are also known for sugary cooking. Perhaps this isn't quite so healthy? Gillian Peel, UK

JM: We should all be concerned with achieving a healthy balanced diet, with the occasional treat. We really shouldn't be worried about fad diets - just look at the Mediterranean diet it's all about balance. Just try selling the Atkins diet to the Italians.

I understand you're a bit of a pudding man, what dessert would you suggest I make that is quick and easy, but looks impressive, to round off a Sunday lunch with friends? Beatrice, Aberdeen

JM: One of the easiest but most impressive puddings to make is a steamed sponge pudding which you can make in four minutes in the microwave.

Hit or a miss? Jury out on enigmatic Burley

As manager at Portman Road, he endured relegation, won promotion and scaled the heights of fifth place in the Premiership in the space of two years. The descent was just as swift.

Burley joined Ipswich as an apprentice in 1972 and was affectionately known as Baby, owing to his boyishness, and Two-Dinners for his voracious appetite.

He played more than 500 games for Ipswich, who won the FA Cup in 1978 and finished runners-up in the old English first division in successive seasons, 1980/81 and 1981/82.

Terry Butcher has a vivid recollection of Burley's Ipswich debut in 1973. "In his first game he was up against George Best; talk about a baptism of fire," said Butcher, who is godfather to Burley's daughter, Lisa.

"We beat Manchester United 2-1 and Burley was excellent.

Every School Every Thursday -- Urbandale

Students who could answer questions about others at their table won ice-cream bars.

Mix-it-Up Day was a good source of discussion on social boundaries at Summit Middle School. Guidance staff followed the activity by giving staff resources for other suggested activities. Mix-It-Up Day pushes students to venture outside their comfort zones under controlled conditions. It is an opportunity for them to meet new people and expand their relationships with different classmates.

Summit students, along with much help from their families, won the prize in the Combat Hunger citywide fundraiser drive - which was a visit by two members of the traveling Radio City Music Hall Rockettes' dance troupe. More than 44 schools in the metro area joined in the competition to raise money for the Food Bank of Iowa.


Devil House wins Big A's Happy Princess Stakes

Chuckie Lopez was aboard for trainer Bruce Levine as the 4-year-old earned her sixth win in 12 starts. The time was 1:11.43 for the six furlongs on the fast track.

Devil House, the 3-2 favorite, paid $5.10, $3.60 and $2.70. Charlotte's Di returned $3.70 and $3.20. Are We Dreamin paid $4.70 to show.
