Last Friday evening, while most Cornellians were enjoying the start of a weekend, hundreds of students in the Hotel School were busily cooking, setting tables, perfecting decorations and practicing speeches. The event that was soon to start in the Grand Ballroom of the Statler Hotel, the annual Gala dinner, would host nearly 300 hotel industry leaders for the evening. The dinner was just one of many events that took place over the past weekend as part of the 82nd annual Hotel Ezra Cornell, which brought hundreds of hotel industry leaders to Cornell, and even more hotel students to plan and execute the weekend. Guests paid up to $1250 to be pampered in the hotel, eat gourmet food and participate in seminars relating to the industry. “It's a great way to bring industry leaders to campus," said Arthur Chang '07, managing director of HEC.

So why are we thinking about barbecue in this frigid weather? How could we not? It's everywhere: Gourmet magazine recently touted Chicago's saucy sensation Smoque. Sheffield's is about to launch its own smokehouse. Even Carson's is expanding in Lincoln Park. To get you up to speed, we did a quick survey of top 'cue spots.

Monday's Small-Cap Winners & Losers

Small-cap stocks moved tightly with the broader market Monday for most of the day before coming up slightly higher than the rest, though still ending up in negative territory.

Among the winners was Metabolix (MBLX - Cramer's Take - Stockpickr), which develops eco-friendly products, after it formed a joint venture with agricultural processor ADM (ADM - Cramer's Take - Stockpickr) in order to make biodegradable plastics. The first plant for these purposes should launch in 2008. Cambridge, Mass.-based Metabolix surged 15% to $20.70; ADM closed 1.1% higher at $38.96.

Metals-components maker Kreisler Manufacturing (KRSL - Cramer's Take - Stockpickr) shot up 18.4% to $24.28 after announcing a three-year deal with United Technologies (UTX - Cramer's Take - Stockpickr) for F119 engine components.

Quest for the best: One man's search for the ultimate burger

Hamburgers are basic. Beef simplified and practically digested. No bone. No outer strips or inner marbling of fat. Nothing but ground meat from rim to center.

Which is possibly why there's a need to cover them with cheese; slather them with ketchup, mustard and mayo; pile them high with lettuce, tomato, onion, pickles and possibly bacon and mushrooms.

I fix a pretty good burger at home, but there are times, usually when dining from a bar stool, that it just seems like the right thing to order. The question is: Where?

I wasn't necessarily looking for the most exquisitely prepared burger, though I wouldn't discount finesse. Nor the most fancifully garnished. Just the one that makes you say, ''Now, that's a good burger.'' The burger of burgers. The ur-burger, that's what I was after.


Organic pet foods not always safer

The growing list of pet food recalls has led many pet owners to look for alternatives from mainstream pet-food manufacturers.

Allison Woeckener, owner of Happy Dog Bakery, 1608 7th St., Moline, said since pet food recalls started a month or so ago, she has seen increased interest in the all-natural pet food line, Solid Gold, sold at her store.

"I've had calls since (the recalls) went public," she said. "I've had five calls a day if not more. They're just concerned about where their food is manufactured."

With tainted ingredients imported from China in more than 100 brands of cat and dog food, and a second wave of recalls announced just this past week, Ms. Woeckener said Solid Gold is a great choice because all its products, with the exception of one cat food product, is made in the United States.


Cook-off turns up heat on aspiring teen chefs

The four apprentice cooks hovered in anticipation as the executive chef from the Grand Hyatt in Buckhead sampled their dishes.

Was the braised chicken leg with pomegranate barbecue sauce properly cooked? How about the seared tuna rolled with wasabi, enoki mushrooms, carrots and radish sprouts? And did the Georgia wild strawberry mousseline with chocolate ganache and pecan brittle taste as good as it looked?
