IT'S EASTER, it's a bank holiday weekend - and best of all, it's predicted to be sunny. But celebrating Easter has a huge ethical cost, experts claim. Our insatiable demand for chocolate (we are expected to consume 80 million Easter eggs) raises serious concerns over waste levels, fairtrade and sustainability. Then there's the hundreds of thousands of Scots whose flights abroad are pumping pollution in every direction. Even the Easter dinner is under fire as the food miles clock up.

Supermarkets are clambering over one another to show their green credentials, yet their Easter offerings fall short. A Sunday Herald survey found that Tesco and Sainsbury's have just one own-brand Fairtrade chocolate egg each, while Morrisons has none. Marks & Spencer has been quicker off the mark with a full range of organic children's lines, some 30 different products).


New manager, county are off to a good start

Fortunately for Freilinger, the marriage is off to a good start because a majority of commissioners seem to be on the same page with their "honey-do" lists.

Guess what? Transportation and the budget are on top of the list for the three commissioners not up for re-election. Assessing the organization and building morale also are right up there.

"I expect him to come in and evaluate the organization to see if it is operating at an efficient level," Commissioner Paul Owen said. "I would like to see a report from him in 90 days with changes we need to make -- or if we are on target and no changes are needed. I'd like to see a total assessment of what's going on. A new person coming in has the flexibility to look at things in a different way. I'm excited about the possibilities.


Danika's big day

TEARS welled in the eyes of Danika Schofield's family and friends as her dad tenderly squeezed the young bride's arm before giving her away.

The 18-year-old walked up the aisle on Saturday, days before going into hospital for cancer treatment.

When Gavin Brown, 20, proposed to her on Valentine's Day the couple planned to get married next May.

But when Danika was diagnosed with five tumours in her abdomen they decided to organise their dream wedding in just a month.

Danika, who lives in Ramleaze, West Swindon, was diagnosed with Hodgkin's lymphoma in September 2000 and has bravely fought off cancer three times before.

And she used her special day at the Ivy Hotel in Wroughton as a chance to remember friends who have died from the disease.


Developer wants more land for department store

Developers of The Crossings, to be anchored by Target and opening its doors in October, announced Thursday the addition of the three stores to its list of tenants. The shopping center is under construction at the southeast corner of U.S. 31 and Beltline Road Southwest.

George Tomlin, an owner of developer GBT Realty, is also pitching an unnamed, 69,000-square-foot "upscale-oriented department store, not a discount store" that he wants to locate on adjacent property owned by the Morgan County School Board. He's offering $2.4 million for the 12 acres of school land, which would be Phase 2 of The Crossings.

The additional land would permit GBT to expand the 260,000-square-foot shopping center by 117,724 square feet, he said in an interview Thursday.

"We don't have to develop it, and they don't have to sell it, but we think it would be a win-win situation," Tomlin said.


Let's go Dutch

SANDY, Utah -- When Scott Clawson was 12 years old, he saved his money and bought his first Dutch oven, practicing his culinary skills during camping trips with fellow Boy Scouts."We would do all the cooking and the rest of the Scouts would do all the eating," said the 28-year-old West Jordan man.That youthful ingenuity paid off recently as he and younger brother Dave Clawson, 25, of Saratoga Springs, were named winners of the 2007 World Championship Dutch Oven Cook-off.Each two-person team had six hours to cook an entr Dee, bread and a dessert for a panel of local judges, which includes chefs, media and sports personalities.

The Clawsons were the youngest of the 13 teams competing in the event, part of the International Sportsmen's Exposition. The brothers impressed the judges with their entr Dee of beef tenderloin with lobster tails, Philly cheese steak rolls and a layered chocolate cake with strawberry cream filling.Before the judges' scores were tallied, the Clawsons said they had an edge on the competition because they had been lucky enough to earn a sponsorship from Omaha Steaks, which paid for the quality beef in two of their recipes.The team earned $5,000 and cast-iron bragging rights for the year.
